Ridiculously Easy Oven-Roasted Cajun Style Salmon
This recipe comes from my friend Susan and is apparently so easy that even I can make it which is the unwritten stipulation for craigswine recipes. Thanks Susan.
Ingredients
- 1-1/2″ to 2″ thick salmon fillet cut into 3-4 oz portions
- Your favourite Cajun-style seasoning (a recipe for my favourite is below)
- Maple syrup (about 1 tsp. per portion or to taste)
Instructions
Spray a griddle pan with cooking spray and place in the upper half of a COLD OVEN. Set oven temperature to 550°F. While the oven is heating, sprinkle Cajun-style seasoning onto the salmon fillets and then brush on a small amount of maple syrup.
Once the oven is heated, carefully remove griddle pan from the oven and add the salmon filets. (It will splatter a bit).
Return the salmon to the oven and cook for about 10 minutes per inch of thickness or until done to your taste. To add a little more colour, turn on the broiler for the last minute. If I’m in a hurry I turn the oven to broil when I put the salmon in the oven and cook it for 5-7 minutes.
Cajun-Style Seasoning
(makes about 2/3’s of a cup)
- 2-1/2 tbsp. paprika
- 1-1/2 tbsp. sea salt
- 2 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tbsp. black pepper
- 1 tbsp. cayenne pepper
- 1 tbsp. dried oregano
- 1 tbsp. dried thyme
Combine all ingredients in a bowl and stir until well combined. (Transfer unused mixture to an airtight container and store in a cool, dark place).
CRAIG’S WINE PAIRING:
Remember spicy foods like slightly sweet wines. I suggest a Riesling or even a Rosé or Blush. If not too spicy you may try an oaky Chardonnay.
